Last week my company started using incoming e-mail with the announcements list on our intranet's home page. (Use case: the office administrator receives frequent announcements from our building's management company, and must forward them via e-mail to staff as well as create an announcement on the Intranet. Activating incoming e-mail on the announcements list reduces one step - now she sends an e-mail and the item appears on the home page as well as in the employees' inboxes.)
I wanted to share a few minor issues we encountered, and how to solve:
1. Make sure that Enhanced Rich Text is enabled on the Body field of the announcements list, otherwise you'll see this:

2. When sending an item to a SharePoint announcements list, you will probably want to delete your automatic signature from the e-mail before you send - it can take up a lot of real estate on your home page.
3. There is no out-of-the-box way to fill out metadata on the list using the e-mail form, so to set an expiration date on an announcement you will have to go into the list after the item has arrived and enter one manually, OR create a default calculated date for all items that is, for example, "one week from today."
As we expand our use of incoming email to other types of lists I'm sure I will find more minor issues like this & will share as they come up.
